My center console was similar to yours. After being repaired and recovered, it looked wider when placed in the car. Probably due to the thickness of the foam I used. The original stuff was paper thin removing it after all those years.
Once the seats were in and everything adjusted, I didn't worry about it anymore. The seats will never change position as I have my positioned as I want it and the other seat hasn't been changed either. Car is looking good getting put back together.
